The main reason to visit G.Graf is their poultry. The new restaurant has its own game husbandry in northern part of Vologodskaya region, with wild boars, bears, deer, roes and smaller animals. Russian poultry is cooked in Italian manner by Giovanni Sica Susini – a chef from Toscana. Another specialty is famous butter from Vologda, which has the reputation of the best butter in Russia. In G.Graf you can try this butter made by hand especially for the restaurant – it is added to different dishes and gives a special flavor to the pastry. The name of the restaurant refers to the trademark of Italian wines that works with grapes from its own vineyards in Toscana and Lazio. The wine list in G.Graf is absolutely worth studying.
