Probka na Tsvetnom

Aram Mnatsakanov, famous St-Petersburg chef and restaurant owner, opened his first place in Moscow named Probka na Tsvetnom. The center of its spacious hall is occupied with an open kitchen decorated with various copper utensils. The chef is Valter Bizoffi, who previously worked at the restaurant Il Grappolo. On the menu one will find vegetable terrine with mustard sauce, dorado carpaccio with courgettes and Burrata cheese, Sicily-style octopus. Instead of usual shrimps and arugula salad, the salad list contains such interesting combinations as radish, fennel and goat cheese or celery, spinach and Pecorino. They also have pizza with Parma ham, black truffle and spicy Salami and several pasta kinds, including maltagliati and garganeli.
